homemade mayoHomemade Mayo. Where have you been all my life? It’s really not that hard to make in the blender:

1 egg, olive oil (light, not extra virgin). dry mustard (I didn’t have any so I used a tsp of dijon), 1/2 tsp salt, 2 Tbl lemon juice. Put the egg and the lemon juice into a blender. Let them come to room temperature about 30 min up to 2 hours. Here is where I confess that I am impatient with things like this. I waited about 10 minute. Don’t judge. Then add the salt, mustard and 1/4 cup of the oil. Blend until mixed. Then the fun begins. With the motor running on medium, drizzle, and I mean the finest stream you can manage, a cup of oil into the blender until it all emulsifies. This will take about 2-3 minutes. I did muster the patience for that. I know if I didn’t I would ruin it. It’s soooo much better than store bought and I can use it in many recipes guilt free on my paleo program. Yum.

Simple, fresh ingredients create simple fresh and delicious things. A good recipe for life. Simple breathing techniques, simple movements, simple massage, all therapeutic and all yielding a feeling of being connected and satisfied.

Day 2 of my regimen was another great success. Wonderful meals and avoided all things inflammatory. (Which means I didn’t watch the news either!) Life is good. Don’t make it too complicated.
